Easy No-Bake Cheesecake!

This no-bake cheesecake can get no easier and is sure to thrill the tastebuds of friends and family! With just a couple of easy steps, you can have a beautiful and elegant dessert for the center of the table. I will add in suggestions along the way on how to infuse south indian flavors into this New York Style classic!

The Crust

(Note: The crust requires baking, so if you don't have an oven, you can use a ready made graham cracker crust)

Take 4 tbsp. of melted unsalted butter and add it to crushed arrowroot or digestive cookies. I did not want to settle for the ordinary graham cracker crust and arrowroot cookies are a south indian favorite, so I thought why not use it as the base of the crust instead!

To give it a bit more texture as well as some crunch after its baked, I added 1/4 cup whole oats and mixed it all together!

I then transferred the mixture into a shallow baking dish and pressed it into place along the bottom. For that extra south indian pizazz, I sprinkled some crushed cardamom on it so that when it bakes, the aroma just encapsulates the crust. Totally optional though!

Bake the crust for 7 minutes at 350 degrees and just wait to see how amazing your kitchen smells!

Take it out of the oven and leave it on a wire rack for cooling until it is time to use it!

The Filling

Now to get started on the filling! Here are the first couple of ingredients you will need!

Pour the unflavored gelatin into a mixing bowl (Fig.1) and then add the sugar to the gelatin (Fig.2).

Then mix the sugar and gelatin until combined and pour it into the boiling water. For the south indian touch right about here, add one clove to the boiling water as well and then wait one minute and discard the clove. It will leave the water with a wonderful aroma! Then you can mix it all together until the gelatin is dissolved.

This is how it should look like after the gelatin is all dissolved.

Now its time to handle the cream cheese. Make sure it is softened at room temperature and then take a spoon and "mash" it until it gives way a bit. This will make it easier to whisk later!

After the cream cheese is nice and soft, you can add in 2 tbsp. of vanilla extract and whisk it all together (here is where the previous "mashing" helps out)!

After it is all whisked up, it should look a little like this and then it is time to add in the gelatin and water and sugar mixture we prepared earlier. One step closer to a delicious cheesecake!

You can mix or whisk in the gelatin mixture thoroughly until it is all well combined and reaches a "liquidy" consistency, almost like cake batter.

Now it is time to take your finished crust and pour in the cream cheese mixture!

So now comes the hard part...the wait. The cheesecake should be refrigerated for at least 4 hours but preferably overnight :-(

The Final Product

Now you can finally enjoy the bliss of a no bake cheesecake!

To top it off with a South Indian Special, you can glaze it with a decadent homemade mango jam!

So there you have it! a wonderful and easy no bake cheesecake that is a perfect addition to the lunch or dinner table, and is the go to dessert for that last minute party (we've all been there), leaving you with time to spare!
