Delectable Mango Jam!

Mangoes are the go to fruit when it comes to needing something refreshing on a brutally warm day in India. This mango jam can be used to liven up any boring breakfast toast or even as your new favorite ice cream topping.
The Recipe

Since we don't get fresh mangoes here all year round, frozen mangoes are a wonderful alternative. Add about 2 cups of mangoes to a nonstick pan on medium heat.

Once the mangoes start losing some of its shape, add about 1/2 cup of sugar to it. If you're using frozen mangoes wait until they are thoroughly defrosted. Since all mangoes vary on sweetness, taste the mango mixture and add more sugar as needed.

Mix the mangoes thoroughly with the sugar and then add about 2 cups of water and let it simmer.

Wait until the water reduces a bit to a syrupy consistency and transfer the mangoes to a bowl and mash it until it gets to a puppy consistency.

It should look something like this when done. Transfer the mixture back into the pan and turn it back onto medium heat.

Add another cup of water to the mixture and stir it well. Allow it to reduce while constantly stirring.

Once the mixture is all reduced, you should be able to drag the spoon through it as shown without it quickly returning back to its original state. It's Finally ready!!!!

You can now transfer the mixture into jars, refrigerate for up to a month and enjoy any time!!!!
