The Recipe

Melt 2 tbsp of butter in a pan.

Slit the middle of the vanilla bean and add it to the butter and stir it around until the vanilla seeds start seeping into the butter. Your kitchen is probably smelling like a vanilla heaven right now!

Sieve the butter mixture into 1 and 1/2 cups of brown sugar.

Whisk it up nicely!

Add one egg and keep on whisking! Isn't this amazing! We get a workout and a healthy treat all in one!

It should reach this silky consistency!

Mash 2 bananas until it reaches this puppy consistency.

Pour the mashed bananas into the brown sugar mixture.

Whisk it thoroughly until it looks like this (or close).

Now you can add the mixture to 2 cups of whole wheat flour.

Mix 1 tbsp of baking soda with 2 tbsp water and add that to the flour as well. Mix it well.

After the dough is mixed throughly, add 3 crushed cardamoms, 1 tsp of cinnamon, and i tsp of nutmeg and mix it thoroughly. You're almost there!

Add 1/4 cup of walnuts and fold through.

Butter a baking sheet and preheat the oven to 350 degrees.

Make the "seasoning" for the top of the cookies with 1/4 cup brown sugar, 2 crushed cardamoms, 1 tsp nutmeg, 1 tsp cinnamon and 1/2 tsp pumpkin spice (optional).

Roll the dough into balls that are about 1 inch wide. Then sprinkle with the brown sugar-cardamom-nutmeg-cinnamon mixture.

For a little extra sweetness, you can add a dark chocolate chip to the center of each cookie and press it firmly!

Now it's time to bake! Bake the cookies for 15 minutes in the preheated oven...

...and ENJOY!
